Bruschetta on Baguette Croutons

Ingredients

• 1 loaf French bread, cut into 1/4-inch slices
• 1 tablespoon extra-virgin olive oil
• 8 roma (plum) tomatoes, diced
• ⅓ cup chopped fresh basil
• 1 ounce Parmesan cheese, freshly grated (to sprinkle on top)
• 2 cloves garlic, minced
• 1 tablespoon good quality balsamic vinegar
• 2 teaspoons extra-virgin olive oil
• ¼ teaspoon salt
• ¼ teaspoon freshly ground black pepper
• 1 teaspoon of lemon juice

Directions

1. Gather all ingredients.
2. Preheat oven to 400 degrees F (200 degrees C).
3. Brush bread slices on both sides lightly with 1 tablespoon oil and place on large baking sheet.
4. Toast bread until golden, 5 to 10 minutes, turning halfway through.
5. Meanwhile, toss together tomatoes, basil, and garlic in a bowl.
6. Mix in balsamic vinegar, 2 teaspoons olive oil, salt, and pepper & lemon juice.
7. Spoon tomato mixture onto toasted bread slices.
8. Sprinkle fresh Parmesan on each piece.
9. Serve immediately and enjoy!
